SOIL: Sandy deep red

VINIFICATION:
Hand-picked and transported in small cases of 15 Kg.
Crushed over the tanks and 50% whole berries.
In their gravity-fed winery inside a hill, grapes are crushed over open tanks without pumping and maceration is done by punching down the marc, fermentation is completed in barrels, 50% new and 50% second wine of French oak, and it was aged “sur lie” for 18 months without any raking.

PRIMARY AROMAS: Ripe red fruits, dried plum, dried orange peel

 

FLAVOR: Subtle oak – fresh tobacco and black pepper; firm structure, with still lively acidity, elegant and lengthy palate; chewy body and a dry finish that will soften with time.

FORMAT: 750 ml

ALCOHOL: 13.5%

SERVICE AND SUGGESTION:
Ideal with any kind of grilled meat, charcuterie and strong cheeses, also with casseroles and other spicy dishes.

ABOUT THE PRODUCER: 
Francisco Carrau Bonomi, Owner & Winemaker:
Doctor in Chemistry in yeasts and wine aromas. From 1981 he played the role of winemaker and participated in the management of Bodegas Carrau. In the 90s he promoted the research and development area of the company, whose innovations allowed to open new export markets such as the United States, thus contributing to the development of the prestige of Uruguayan wine in the world. He is currently closely advising the Cerro Chapeu project.

ABOUT THE VINEYARD: 
Cerro Chapeu is located on the formation of soils called Batovi dorado, where red and deep sandy soils of low fertility are characteristic, considered to be among the oldest in South America.
Plot T1 was identified years ago as the best Tannat in Cerro Chapeu. Ripe grapes of low production, harvested by hand. Vinified with the highest technology in our gravity cellar and bottled with minimal handling in Cerro Chapeu.
